Do it for the hens

Via bls at The Topmost Apple comes word of a Humane Society campaign to get religious people to replace eggs from battery hens with cage-free eggs or egg substitutes during the month of October. Great idea. St. Francis would be proud.

Be warned, though, that there are a lot of labels (organic, free-range, cage-free, certified humane, etc.) that mean different things and which may or may not have effective oversight and enforcement mechanisms. As it happens, the HSUS has a handy guide to these labels.

  1. OH, good – thanks for the guide. That’s exactly what I need; I’m spending almost $4 a dozen, and that’s just way too much when you’re skeptical about the claims to begin with.

Now I’ll go look up my brand….

  2. Well, I’m back. There’s really no good way to buy eggs, it seems – except maybe from a local farmer or a friend who has some chickens. My mother had a friend who gave her eggs; maybe I can hook up with something like that.

What sorts of substitutes are there, do you know? I’ve never heard of this, but I’m game if you can bake with an egg subsitutute.

  3. bls, I’m going to have to confess a certain amount of ignorance here (I’ve yet to attempt to phase eggs out of my diet), but this page looks like it has some good tips:

I’m sure there’s plenty of other pages on the ‘net, and any decent vegetarian/vegan cookbook should have some suggestions.
