I really liked this essay in the magazine America by Elizabeth Johnson, the well-known feminist theologian. She argues that Jesus’ ministry, death and resurrection, and the incarnation as a whole have implications for the entire creation, not just human salvation:

Jesus Christ is a gift given because “God so loved the world,” kosmos in Greek (Jn 3:15). Christ’s benefits are intended not just for the human world but the whole natural world in its beauty and pollution, its wonder and distress.

Theology has already thought a lot about how the doctrine of creation can help Christians respond to ecological concerns, but I think its good that many theologians are now bringing specifically Christological resources to bear here.
